Emeril Lagasse Heads South of the Strip
Back where I’m from in the Midwest, a celebrity chef opening a restaurant nearby would have been discussed at the hardware store for six straight months. In Las Vegas, it can happen between breakfast and a pool party. Still, this one deserves attention: Emeril Lagasse has opened his first off-Strip Las Vegas restaurant at M Resort in Henderson.
Meril at M Resort opened to the public Thursday, July 16, following a ribbon-cutting and preview event earlier that week. Named for Lagasse’s daughter, the restaurant serves breakfast, lunch, and dinner from a prominent spot inside the resort at 12300 Las Vegas Boulevard South.
The location matters. Lagasse has been part of Las Vegas dining for decades, and The Emeril Group already operates Emeril’s New Orleans Fish House and Delmonico Steakhouse on the Strip. Meril brings his cooking to the southern edge of the valley, where Henderson residents and other locals can reach a major chef-driven restaurant without committing to a full Strip expedition.
That may not sound revolutionary until you have spent 25 minutes trying to remember which casino garage contains your car. Free self-parking at M Resort is a practical little victory, especially for a weeknight meal.
What Kind of Restaurant Is Meril?
Meril is billed as a lively contemporary American restaurant shaped by Lagasse’s travels and the foods he likes to eat. It is not limited to one region or one formal dining style. Creole and Gulf Coast flavors are present, but the menu also moves through Mediterranean, Asian, Italian, and Latin influences.
This is also not the first Meril. Lagasse opened the original restaurant bearing his daughter’s name in New Orleans. The M Resort location adapts that broad, globally influenced approach for an all-day resort restaurant, rather than simply copying the menu from one of his Strip establishments.
A Menu Made for Passing Plates Around
The lunch and dinner menu makes a strong case for ordering several dishes and sharing. Snacks include pineapple upside-down cornbread with bacon marmalade for $8, house boudin balls with pepper jack cheese and Creole mustard for $12, and crispy Gulf shrimp tacos with sambal aioli and pickled red onions for $14.
Small plates keep moving across the map. Gulf yellowfin tuna bundles come with jalapeño, truffle ponzu, wontons, and tobiko. Steamed mussels are served with piri piri sauce and house-made chorizo, while candied pork ribs arrive with green onion and sesame. There are also house meatballs, crispy cod sliders, barbecued shrimp, and General Tso broccoli.
That range could look chaotic on paper, but the common thread is food built for a table that wants to try a little of everything. It feels less like a special-occasion dining room where everybody guards a single entrée and more like the kind of place where someone says, “We should probably get one more thing,” three different times.
The Bigger Plates Still Carry Emeril’s Signature
Diners looking for a more traditional main course have plenty of options. The menu includes buttermilk fried chicken with tzatziki, lemon zest, and dill for $22, blue crab linguine with Calabrian chile butter for $28, and a seasonal seafood boil with shrimp, mussels, clams, corn, and andouille sausage for $39.
A grilled ribeye with blistered sweet peppers and chimichurri is listed at $56. The market fish is paired with corn maque choux and lemon Creole butter. Flatbreads, salads, pasta, and a double cheeseburger fill out the middle ground for diners who do not need to turn Tuesday dinner into a culinary endurance event.
And yes, the banana cream pie is here. Meril’s dessert menu also lists Rocky Road bread pudding, Grand Marnier tiramisu, beignets, cotton candy, and rotating ice cream and sorbet. If your table orders cotton candy after a seafood boil and ribeye, you are doing Las Vegas correctly.
Breakfast Gives Meril a Different Role
One of the biggest distinctions is that Meril is not waiting until dinner to wake up. Breakfast begins at 6 a.m. daily, giving M Resort another full-service morning option and letting Lagasse’s Louisiana influence show up before noon.
Breakfast highlights include bananas Foster French toast with candied pecans for $15, an andouille sausage potato hash with a poached egg for $17, and barbecued shrimp with a crispy grit cake for $22. There is also a buttermilk biscuit with andouille gravy, a bacon, egg, and cheese flatbread, and beignets served three to a bag.
For traditionalists, Meril offers pancakes, eggs Benedict, omelets, steak and eggs, and a standard breakfast with two eggs, meat, toast, and a choice of grits or potatoes. It is a practical menu with enough New Orleans personality to remind you whose restaurant you walked into.
Drinks and a Late-Night Option
Meril’s official offerings include a dedicated wine list and a selection of after-dinner drinks. The nightcap menu features an Irish Channel coffee, a chocolate martini, a Carondelet carajillo, espresso drinks, port, grappa, and Sauternes.
The restaurant stays open until 1 a.m. on Friday and Saturday, which gives the bar and dining room room to operate as more than a dinner stop. Sunday through Thursday, the posted closing time is 10 p.m. Hours and menu prices can change, so checking the restaurant’s official page before making the drive is always the sensible move.
Why This Opening Matters for Henderson
Calling Meril a locals-only restaurant would be a stretch. It sits inside a full resort and is built to serve hotel guests, casino visitors, and people coming from across the valley. But its location makes a real difference for diners in Henderson, Southern Highlands, and the fast-growing communities near the southern end of Las Vegas Boulevard.
For those neighborhoods, a Lagasse restaurant no longer requires a trip into the center of the Strip. You can park, walk inside, eat Gulf shrimp tacos and banana cream pie, and head home without navigating a boulevard full of rideshares, pedestrians, and rental cars making last-second lane changes. Back home, we called that a normal dinner. In Vegas, it feels almost suspiciously convenient.

Meril gives Emeril Lagasse a new foothold beyond the Strip and gives the south valley an all-day restaurant with genuine range. You can stop in for French toast at sunrise, split boudin balls and flatbread for lunch, or settle into ribeye and banana cream pie at night. That is a lot of ground for one dining room to cover, but if anybody can bring a little extra volume to the neighborhood, it is Emeril. Bam, indeed.
