For a larger meal, the Cajun chicken pasta combines blackened chicken, andouille sausage, penne, mushrooms, bacon and Parmesan in a light cream sauce. That is a wider spread than the burgers-and-wings menu people may expect from the words “bar and grill.” It also makes STG more flexible. A group can order cocktails and shareable food while somebody else gets salmon and another person goes straight for the burger. The restaurant is next to Roxy’s Lounge near the table games. That positioning makes it easy to combine dinner with other attractions at Sam’s Town, but STG can also function as the destination itself. Locals do not need to book a hotel room or make a full casino night out of it.

It Is Part of a Bigger Boyd Gaming Strategy

STG is not a one-off experiment. In its opening announcement, Boyd Gaming connected the restaurant to gastropub concepts at several of its other Las Vegas Valley properties, including Bailiwick at The Orleans, 90 Ninety at Suncoast, Charter 75 at Gold Coast and Tin Lizard at Cadence Crossing.

The company also said additional gastropub concepts are planned for Fremont Hotel and Casino and Aliante Casino Hotel and Spa. For Sam’s Town, the immediate result is a contemporary, social restaurant intended to cover more occasions than a traditional casino café.
