Two restaurants with roots in the Las Vegas Arts District expanded to new food-court locations in spring 2026, but they did not join the same project.
SoulBelly BBQ opened at Miracle Eats inside Miracle Mile Shops on April 24. Good Pie followed with a separate location at Red Rock Casino Resort & Spa, where it celebrated its grand opening on May 11.
The openings put both locally established brands in front of larger resort crowds. SoulBelly now has a fast-casual outpost on the Strip, while Good Pie has expanded into Summerlin.
SoulBelly BBQ Opens at Miracle Eats
SoulBelly Express is part of Miracle Eats, the food court inside Miracle Mile Shops next to Planet Hollywood Resort & Casino. The restaurant opened there on April 24, 2026.
Founded by chef Bruce Kalman, SoulBelly began in downtown Las Vegas in 2021. Its original restaurant remains open at 1327 South Main Street, where the company identifies Kalman as its founder and smoker.
The Miracle Eats outpost operates as a fast-casual version of the barbecue restaurant. Its curated menu includes the Texas Cheesesteak with sliced brisket, peppers, onions and provolone, along with the Boss Hog pulled-pork sandwich and Brisket Burnt End Grilled Cheese.
Banana pudding-style soft serve is exclusive to the Miracle Eats location. Current published hours are 10 a.m. to 9 p.m. Sunday through Thursday and 10 a.m. to 10 p.m. Friday and Saturday.
Good Pie Expands to Red Rock Resort
Good Pie's third Southern Nevada location opened inside the food court at Red Rock Casino Resort & Spa in Summerlin.
Founder Vincent Rotolo and the Good Pie team celebrated the location's grand opening on May 11, 2026. The quick-service shop sells pizza by the slice and as whole pies for dine-in or takeout.
The menu carries forward the styles associated with Good Pie, including Grandma pies, Brooklyn-style slices, Detroit squares and Sicilian squares. The White Pie Remix, made with more than seven cheeses and finished with red pepper flakes, lemon zest and olive oil, is available exclusively at the Red Rock location.
Good Pie was founded by Rotolo in 2018. The company also operates locations in the Arts District and Henderson. Published hours for the Red Rock shop are 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Friday and Saturday.
Two Separate Expansions for Arts District Brands
The timing made the openings easy to conflate, but they involve different food courts in different parts of the Las Vegas Valley.
