You do not need a flight to Barcelona to drink at the bar that topped The World's 50 Best Bars in 2023. SIPS Drinkery House opened its Las Vegas pop-up on October 31 inside VISTA Cocktail Lounge at Caesars Palace, and it runs through December 31. Caesars brought the Barcelona bar in for the resort's 60th anniversary, with a 16-drink menu that mixes SIPS signatures with cocktails created specifically for Caesars Palace.

That mix is the useful part. Regulars who have chased SIPS in Spain get something new to try, and first-timers get the classics that built the reputation in the same sitting.

A Bar That Rose in Two Years

Bartenders Simone Caporale and Marc Álvarez founded SIPS in 2021 in Barcelona's Eixample neighborhood. By 2023 it was named The World's Best Bar. It followed that with a No. 3 ranking in both 2024 and 2025, and it earned the Best Bar in Europe title in 2024.

SIPS built that run on flavor first, then presentation. Caesars describes the approach as serious cocktails served in playful forms, with carefully selected ingredients and clever presentation. At VISTA, that presentation travels with the drinks. For the run of the pop-up, the lounge screens show the Barcelona skyline and footage from SIPS, branded pillows and coasters fill the room, and select cocktails arrive in the same glassware used in Barcelona.

Order These Three First

With 16 cocktails and a closing date, ordering in the right order matters. Start familiar, then go for the drinks you cannot get anywhere else on the Strip.

  1. Purple Rain. A modern whiskey sour built on bourbon, wild sour honey and beetroot. It starts like a classic and then the beetroot pulls it somewhere new.
  2. Mosaic. Pisco and aromatic Amazon rainforest woods, served in a painted glass inspired by Barcelona's modernist art movement. You can spot this one across the room before you taste it.
  3. Krypta. Glenfiddich scotch, London dry gin and clarified apple in an egg-shaped glass with fresh herbs suspended inside. The herbs hit your nose first, so the aroma is part of the drink, not a garnish afterthought.

That order works for a reason. Purple Rain teaches you the SIPS idea in one glass, Mosaic shows you the Barcelona art influence, and Krypta is the full theater piece to finish on.

How to Fit It Into a Night Out

Go early in the run, not in the last week of December. The pop-up ends on New Year's Eve, December 31, so a November visit gives you a calmer room and a second chance to go back if a drink sticks with you. Weekday afternoons are the easiest entry, since VISTA opens at 2 p.m. Monday through Thursday, while weekend days start even earlier at 10 a.m.

You do not need a reservation to walk in, but making one removes the guesswork on a Friday or Saturday night. Keep the group small for the first visit if you can. The glassware and the aroma work best when you are close enough to watch the drinks arrive and ask what is in them.

Las Vegas imports a lot, but it rarely imports a whole bar at its peak and gives it a hard end date. SIPS is here for two months, its best-known drinks traveled with it, and a few drinks exist only because Caesars turned 60. That is a night out with a deadline, in the best way.
